Happy Pi Day!

This year I decided to make a pie for Pi day. Not just any pie, but, in honor of the new RaspberryPi 3 I made a raspberry pie. Again dusting off my mother’s pie crust recipe. Well actually, it is from a Better Homes and Gardens cookbook. But it is the one she made for as long as I can remember. The crust was much more successful this time around. I guess I learned a bit at Thanksgiving. The filling turned out well also. Had to google pie thickener to come up with a substitute for tapioca. There were several choices; I went with corn starch which worked at really well. Here is the finished product.

It turns out that my mother’s 88th birthday would have been this month so baking a pie seemed an appropriate endeavor for that reason as well. She passed away 5 years ago without ever having used a computer. Quite an accomplishment in itself. Shortly before her passing she wanted to share some of the traditional family recipes. So rather than email a link or spend money on making copies, she hand wrote the recipes on a piece of paper. Its kind of like she is still with me in the kitchen. I decided to scan and post this recipe so it won’t easily get lost.
